- Gluten-free beetroot cake
- 1/4 cup olive oil, plus extra for greasing the tin
- 150 grams dark chocolate (70%+), chopped
- 200 grams beetroot, washed peeled and grated
- 4 large eggs, separated
- 3/4 cup caster sugar
- 120 grams ground almonds
- 1 teaspoon baking powder
- 3 tablespoons cocoa powder, sifted
- dairy-free yoghurt (optional), to serve
- Chocolate drizzle
- 120 grams dark chocolate
- 40 millilitres non-dairy milk (this recipe used almond)
