• 3 tbsp extra-virgin olive oil
• 1 large yellow onion diced
• 2 lb roma tomatoes diced
• 2 tbsp fresh basil chopped
• 2 tsp kosher salt
• 1 tsp fresh thyme chopped
• 1/2 tsp ground black pepper
• 2 cup mayonnaise
• 2 cup sharp cheddar cheese shredded
• 1 cup Havarti cheese shredded
• 2.5 Ritz crackers crushed
