Ingredients
- 1 to 2 Pieces of Radicchio (divide the leaves)
- 1 cup of Rucola
- 2 peaches or nectarines, thin slices
- 250 gram of Mozzarella sliced up
- 50 grams of pinenuts
- 3 TBSP basil oil (see below)
- 1 tsp balsamic vinegar
- Sea salt and black pepper
- 2 big handfuls of basil
- 50 grams of spinach
- Rind of 2 limes
- 400ml light olive oil
