- 2 Tbsp. Olive Oil
- 1 Onion, small dice
- 3 Garlic Cloves, finely minced
- 1 tsp. each Ground Ginger, Cumin, Coriander, Cinnamon, Paprika
- ½ tsp. Ground Cardamom
- ½ tsp. Ground Turmeric
- 1 (14.5 oz.) Can Chopped Tomatoes
- 1 lb. Butternut Squash
- 1 Cup Chicken Broth
- ½ Cup Dried Apricots, cut in half
- 1 (15 oz.) Can Chickpeas, drained
- Couscous:
- 2 Cups Couscous (Durum Wheat Semolina)
- ½ tsp. Salt
- 3 Cups Boiling Water
- Harissa Yogurt:
- 1 Cup Greek Yogurt
- 2 Tbsp. Harissa Paste
- ½ Cup Mint Leaves
- ¼ Cup Pomegranate Seeds
