Ingredients

• 1 extra firm tofu block
• 3 tbsps olive oil
• 1 onion
• 1 bell pepper
• 3 garlic cloves (minced)
• 1 tomato
• 2 tsps paprika
• 1 saffron threads, pinch
• 360 mls (1.5 cups) short-grain rice
• 720 mls (3 cups) vegetable broth
• 1 green peas cup (frozen)
• 1 lemon whole (cut into wedges)
• 1 salt to taste
• 1 black pepper to taste
