Red Pozole with Chicken – Young Guns Chile

Ingredients

• 2 tbsp extra virgin olive oil
• 1 small onion, diced
• 2-3 lbs large skin-on, bone-in chicken thighs
• 2 tbsp garlic, diced
• 2 cups chicken broth
• 2 cups Young Guns Red Chile Sauce
• 2 15.5 oz cans hominy
• 1 tbsp salt
• 1 tbsp oregano
• 1 tbsp smoked paprika
• 1 poblano pepper, roasted, skin removed, diced
• Salt and pepper to taste
