Raspberry Galette | Scratch Pantry

Ingredients

• 2 1 ⁄ 2 cups unbleached all-purpose flour
• 1 cup cold butter , cut into cubes
• 1 teaspoon salt
• 2 tablespoons sugar
• 1 ⁄ 2 cup ice water
• 3 1 ⁄ 2 cups raspberry
• 1 1 ⁄ 2 tablespoons corn starch OR tapioca starch
• 1 ⁄ 4 cup sugar
• pinch of salt
• 1 egg , beaten for egg wash on the crust
• 1 tablespoon raw sugar , for sprinkling on crust
