Ingredients

• 4 eggs
• 2 English toasting muffins, cut in half
• 1 tbsp white wine vinegar (to poach eggs)
• 4 slices of ham of choice
• 1 tbsp salted butter
• 2 egg yolks
• 125 g unsalted butter
• 1 tsp white wine vinegar
• 1 tsp cold water
• 1/4 paprika
• Sea salt to taste
