Codfish stew with crispy Parma ham - Riberalves

Ingredients

• Olive oil 3 tbsp.
• tomato puree 3 tbsp.
• 1 large onion, chopped
• 6 garlic cloves, slivered
• 400 g potatoes, peeled and cut into 0.5 cm slices
• 1 red pepper, cut into thin strips
• 2 tomatoes, diced
• Sea salt to taste
• 2 bay leaves
• 100 ml white wine
• 200 ml water
• Hot chilli sauce to taste (optional)
• Black pepper to taste
• Finely chopped parsley to taste
• 200 g Parma ham, sliced
