Ingredients
- 4 cups roma tomatoes, diced or halved *roasted tomatoes work best
- 1 large white or yellow onion, sliced
- 2 bell peppers, sliced *roasted peppers work best
- 4-5 cloves garlic minced
- 1 cup olives, halved (I used black olives but green or kalamata would be fine)
- 1 tbsp tomato paste
- 2 tbsp balsamic vinegar
- 2 bay leaves
- 6 sprigs of thyme
- 1/2 cup fresh parsley, chopped, plus some for garnish
- 2 tbsp smoked paprika
- 1 tbsp ground cumin
- 1 tbsp onion powder
- 1 tsp chili flakes
- 2 tbsp water if needed
- salt and pepper, to taste
- 1/3 cup feta cheese, crumbled
- 4-6 eggs (depending on how many people are eating)
