Ingredients

  • 4 cups roma tomatoes, diced or halved *roasted tomatoes work best
  • 1 large white or yellow onion, sliced
  • 2 bell peppers, sliced *roasted peppers work best
  • 4-5 cloves garlic minced
  • 1 cup olives, halved (I used black olives but green or kalamata would be fine)
  • 1 tbsp tomato paste
  • 2 tbsp balsamic vinegar
  • 2 bay leaves
  • 6 sprigs of thyme
  • 1/2 cup fresh parsley, chopped, plus some for garnish
  • 2 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 1 tbsp onion powder
  • 1 tsp chili flakes
  • 2 tbsp water if needed
  • salt and pepper, to taste
  • 1/3 cup feta cheese, crumbled
  • 4-6 eggs (depending on how many people are eating)
