Brioche Wreath Bread with Mont d’Or Cheese –

Ingredients

  • 100ml lukewarm water
  • 50ml lukewarm milk
  • 1 tablespoon caster sugar
  • 1 teaspoon dried active yeast
  • 250g strong flour, plus extra for dusting
  • 1 teaspoon salt
  • 50g unsalted butter, cold and cubed
  • 1 large egg, beaten
  • Olive oil, for greasing
  • 1 whole 350g Vacherin Mont d’Or cheese in a wooden stapled carton
  • 2-3 thyme sprigs
  • 1-2 tablespoons white wine
  • 1 medium egg, beaten
  • Poppy seeds
  • 1fl. oz lukewarm milk
  • Step 1 In a medium bowl, add lukewarm water, milk , sugar and yeast . Let stand for 5 to 10 min utes until mixture becomes frothy .
  • Step 2 In a large bowl, add flour , salt a nd butter . With your fingertips mix the butter into flour until the mixture resembles fine breadcrumbs.
  • Step 3 Make a well in the centre of the flour , then add the warm yeast mixture and the large beaten egg. With your hands, continue to mix until a sticky dough forms.
  • Step 5 When the dough has doubled in size, remove from bowl and knock the air out and knead again for 2 min utes . Add flour as necessary. Portion dough into 12 even pieces and roll into balls.
  • Step 10 When cooking is complete , serve the cheese hot in centre of bread wreath.
