• 5 tablespoons extra-virgin olive oil , divided
• 3 tablespoons minced shallot
• 1 1/2 tablespoons lemon juice
• 1 1/2 teaspoons table salt
• 1 teaspoon chopped fresh thyme
• 1 garlic clove , minced
• 1/8 teaspoon red pepper flakes
• 1 1/2 pounds zucchini , trimmed and halved lengthwise
• 1 1/2 ounces Parmesan cheese , shaved with vegetable peeler (about ⅔ cup)
