Ingredients

• pinch salt
• 4 to 6 tablespoons sugar
• 12 tablespoons chilled unsalted butter
• 3 to 5 tablespoons ice water, as needed
• 3 large navel oranges or 5 to 6 blood oranges
• 1 1/3 cups sugar
• juice of 1 lemon
• 1/2 cup water
• 3 tablespoons cornstarch
• 4 tablespoons unsalted butter, softened
• 3 eggs
• 3 tablespoons Grand Marnier or other orange liqueur
