Tuna Niçoise Salad - Turntable Kitchen

Ingredients

• 3/4 cup of extra-virgin olive oil
• 1/4 cup of freshly-squeezed lemon juice (from about 1 lemon)
• 2 tablespoons of Dijon mustard
• 1 teaspoon of honey
• 1 teaspoon of freshly ground black pepper
• 1 teaspoon of kosher salt
• 6 large eggs
• 1/2 pound of green beans, trimmed
• ½ pound of baby or yukon gold potatoes (if using the latter, cut into quarters)
• 3-4 persian cucumbers, sliced into 1 inch rounds
• 1/4 red onion, thinly
