• salt (ground black pepper, to taste)
• 1 - 1 1/2 Tablespoons olive oil (divided)
• 1 shallot or 1/2 small red onion (minced)
• 2 garlic cloves (minced)
• 1 jalapeno or 1/2 pablano pepper (minced)
• 1/3 cup orange marmalade
• 1 1/2 Tablespoons soy sauce
• 1 Tablespoon lime juice (plus 1/2 teaspoon lime zest)
• 1/2 Tablespoon fresh cilantro (chopped)
