Ingredients

• 1 package (500 g) Lilydale ® Mild Italian Turkey Sausages
• 2 small eggplants
• 2 tbsp (30 mL) olive oil
• 1/4 tsp (1 mL) each salt and pepper
• 1 cup (250 mL) tomato sauce
• 1/2 tsp (2 mL) dried oregano
• 1 1/2 cups (375 mL) shredded mozzarella cheese
• 2 tbsp (30 mL) fresh parsley, finely chopped
