• 1/3 cup (75 ml) chilled unsalted butter, cut into cubes

• 1 tablespoon (15 ml) cold water
• 3 tablespoons (45 ml) cornstarch
• 3 tablespoons (45 ml) water
• 1 1/2 cups (375 ml) maple syrup
• 1/4 cup (60 ml) 35% cream
• 1 egg, lightly beaten
• 2 tablespoons (30 ml) unsalted butter
