This is a bit of a twist on a classic lasagna. It makes a 8x8" pan. So, I find it is the perfect recipe for 1-2 people. Plus, it freezes great too;

Ingredients

  • 6 to 7 ounces dry lasagna noodles (just shy of 1/2 lb - 9-12 noodles no boil flat, no curly edges lasagna noodles, soaked)
  • *FOR VEGETABLE SAUCE*
  • 1 can (28 ounce) diced tomatoes (chopped, do not drain, I used San Marzano)
  • 1 1/2 pounds swiss chard (1 bunch, thick stems removed and chopped 4-4 1/2 cups chopped)
  • 1 medium yellow onion (cut in quarters and thin sliced)
  • 2 garlic cloves, minced
  • sugar, to taste (pinch of)
  • red pepper flakes (pinch of)
  • 1 teaspoon Italian seasoning
  • kosher salt, to taste
  • pepper, to taste
  • 1 tablespoons olive oil
  • *FOR CHEESE*
  • 6 ounces ricotta cheese (3/4 cup)
  • 1/2 cup grated parmesan cheese
  • 1 1/2 ounces fresh mozzarella cheese (torn in small pieces OPTIONAL but suggested)
  • 1/4 cup chopped basil
  • fresh nutmeg (pinch of)
  • 1 teaspoon olive oil
  • *FOR BREADCRUMBS:
  • 1/4 cup bread crumbs(Italian)
  • 1 tablespoon olive oil
  • *Garnish*
  • 2 tablespoons chopped basil
  • 1 tablespoon chopped parsley
