- 900g (2lb) stewing beef, cut into large chunks

- 1 small celeriac, peeled and cut into chunks
- 3 tbsp plain flour
- 2 bay leaves
- 2 tsp fresh soft thyme leaves
- 200ml (7fl oz) red wine
- 500ml (18fl oz) beef stock
- 1 tbsp Worcestershire sauce
- 350g (12oz) self-raising flour, plus extra for dusting
- 1 tsp dried English mustard
- 2 tbsp chopped fresh flat-leaf parsley
- 2 tbsp snipped fresh chives
- 200g (7oz) butter, diced
- 6 tbsp buttermilk
- 1 egg, lightly beaten
