LEEK, TURKEY & HAM PIE, A LEFTOVERS TRIUMPH - Sherry's Kitchen Table

Ingredients

• 1 tbsp butter
• 2 tbsp olive oil
• 1 medium onion chopped
• 3 medium leeks washed and sliced into 1/2 cm
• 1 small pack of button mushrooms, washed and halved
• 2 large clove garlic, finely chopped
• 1 small cup of finely chopped parsley
• a small handful of tarragon leaves, chopped up
• 1 tbsp thyme leaves
• 2 tbsp flour
• 2/4 pt slightly warm milk
• 1/2 cup single cream
• 350 g of chopped up turkey and ham mix, using leftovers.
