  • 1 ½ - 2 lbs “gravy steak” such as top sirloin, round steak, chuck steak, beef tips, top sirloin, or cube steak
  • 2 tablespoons Fat Granny Cajun seasoning, divided
  • ¾ cup all-purpose flour
  • ¼ cup vegetable oil
  • 4 tablespoons (½ stick) unsalted butter
  • 1 large onion, finely diced
  • 1 medium green pepper, finely diced
  • 1 stalk celery, finely diced
  • 4 cloves garlic, thinly sliced
  • ⅓ cup Sherry cooking wine
  • 3 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 3-4 dashes hot sauce, such as Louisiana or Crystal, as desired for heat
