- 700 g pink ling fillets
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- Zest of 1 lime
- 1 tbsp lime juice
- 3 tbsp olive oil
- 1 small brown onion, finely diced
- 1 cup diced carrot
- 1 red capsicum, diced
- 3 cloves garlic, roughly chopped
- 1 ½ tsp brown sugar
- 1 ½ tsp cumin powder
- 1 ½ tsp paprika
- 1 cup fish or chicken stock
- 410 g can crushed tomatoes
- 400 mL can coconut milk
- ½ cup chopped coriander or parsley
- Lime wedges to serve
