Ingredients

  • 2.5 kg pork belly with bones removed and loin left attached
  • 300g pork mince
  • 1 large onion chopped
  • 3 garlic cloves, minced
  • Handful of fresh parsley
  • 3 tbs chopped fresh thyme leaves
  • 4 tbs chopped fresh sage leaves
  • 1 tbs oregano
  • 1 tsp chilli flakes
  • 150g sourdough breadcrumbs
  • 50g pine nuts
  • Zest of one lemon
  • 1 bottle of fruity white wine such as Soave
  • 8 slices or 100g Parma ham
  • 4 carrots
  • 4 sticks of celery
  • 4 thin leeks
  • 1 bulb of fennel cut into 4
  • Salt and pepper
