• 1 1/2 ounces brown sugar
• 1 1/2 ounces granulated sugar
• 6 ounces kosher salt, plus more, to taste
• 1 bunch fresh thyme
• 2 bay leaves
• 1 1/4 pounds ice
• Freshly ground pepper, to taste
