Eggplant Caponata Recipe

Ingredients

• 2 tablespoons raisins or currants
• 1 large diced eggplant
• 2 tablespoons of olive oil
• 1 finely chopped onion
• 2 cloves of minced garlic
• 1 diced red bell pepper
• 2 diced ripe tomato
• 2 tablespoons of rinsed and drained caper (caparis)
• 1/4 cup of pitted and chopped green olive
• 2 tablespoons of pine nut
• 1/4 cup of red wine vinegar
• 1 tablespoon of granulated sugar
• 1/2 teaspoon of salt
• 1/4 teaspoon of black pepper
• 2 tablespoons of chopped fresh basil
