Ingredients

• 1 onion, finely chopped
• 4 cloves garlic, chopped
• 2 tablespoons (30 ml) olive oil
• 1 cup (210 g) Arborio rice
• 1 cup (250 ml) white wine
• 4 cups (1 litre) chicken broth, warm
• 1/2 lb (225 g) Taleggio cheese, diced
• 1 cup (70 g) grated Parmigiano-Reggiano cheese
• Grated nutmeg, to taste
• 1/2 cup (75 g) unbleached all-purpose flour
• 3 eggs, lightly beaten
• 1 1/4 cups (155 g) breadcrumbs
• Peanut oil, for frying
