Southwest Salad with Pork - The Weary Chef
This Southwest Salad is loaded with pork, corn, black beans, tomatoes, avocado, and tossed with a tangy lime dressing. It's a perfect summer meal!
Ingredients
- 1 tbsp. olive oil
- 1 tsp. chili powder
- 1 tsp. chili sauce
- 1 tsp. dried oregano
- 1/2 tsp. cumin
- 1/2 tsp. kosher salt
- 3/4 lb. thin, boneless pork chops (about 4)
- 2 tbsp. olive oil
- 2 tbsp. white wine vinegar
- 2 tbsp. lime juice
- 1/2 tsp. chili powder
- 1/4 tsp. garlic powder
- chili sauce to taste optional
- 14 oz. can black beans rinsed and drained
- 8 oz. can corn drained (or 1 c. frozen corn, thawed)
- 1/4 c. chopped cilantro leaves
- 2 tomatoes diced
- 1 yellow bell pepper diced (omit if you don’t really like bell pepper because the taste is prominent)
- 6 oz. bag mixed baby greens or your favorite salad greens
- 1 ripe avocado cubed
