• Salt and freshly ground pepper, to taste
• 1 beef tri-tip, 1 1/2 to 2 pounds
• 2 sour or sweet baguettes, cut into 1/2-inch rounds
• 2 cups extra-virgin olive oil
• 2 jars Mezzetta roasted red bell peppers
• 1/2 pound Point Reyes blue cheese, crumbled or thinly sliced
