Zucchini Lasagna Rolls - Increedible India

Ingredients

• 2 Zucchini
• ¼ cup ricotta cheese
• ¼ cup mozzarella cheese
• ¼ cup Parmesan cheese
• 2 cups chopped spinach
• ¾ cup marinara sauce
• 1 egg substitute (I used Red Mill Egg Replacer)
• 1 tbsp olive oil
• 2 cloves garlic, minced
• ¼ cup shallots
• ¼ cup walnuts
• 1 tbsp jalapeno
• ½ tsp Italian seasoning
• ½ tsp red pepper flakes
• ¼ tsp black pepper
• Salt to taste
• Finely cut basil if available
