• ½ cup chopped roasted peanuts
• 1-½ tbsp minced fresh ginger
• 4 cloves garlic
• 1 tsp salt
• 3 cups vegetable broth
• ⅓ cup unsweetened peanut butter
• 2 sweet potatoes
• 1 can (28 ounces) whole tomatoes
• 1 bunch kale or Swiss chard
