Chicken Tortilla Casserole

Ingredients

• 2 boneless, skinless chicken breasts, trimmed
• 2 Tablespoons vegetable oil, divided
• 3 tablespoons red onion
• 2 garlic cloves, minced
• 1 jalapeno, minced
• 1 3/4 -2 cups chicken broth
• 5 cups tortilla chips, broken into pieces (I used almost an entire 13 oz. bag)
• 2 tomatoes, cored, seeded, and chopped
• 1 cup shredded sharp cheddar or Pepperjack cheese
• 2 Tablespoons chopped fresh cilantro
