• 3/4 cup (180 mL) sugar
• 1/3 cup (80 mL) cornstarch
• 2 tsp (10 mL) grated lemon rind
• 3 eggs
• 1/4 cup (60 mL) freshly squeezed lemon juice
• 2 tbsp (30 mL) butter cut into cubes
• 1 tsp (5 mL) vanilla extract
• 1 1/2 cups (375 mL) fresh or thawed
• frozen raspberries
• 1 cup (250 mL) coarsely crumbled butter cookies
