Rhubarb and maple spice cake

Ingredients

• 200 g olive oil spread
• 100 g (about 1/2 cup) muscovado sugar
• 1/2 cup maple syrup (you can use golden syrup)
• 2 large eggs
• 1 1/2 cups GF flour
• 1 tsp baking powder
• 2 tsp mixed spice
• 1 tsp ground ginger
• 1/2 tsp cinnamon
• 1/2 cup ground almonds
• 1 tsp baking soda
• 2 tsp warm water
• 2 cups chopped rhubarb
• 1/2 cup almonds, roasted and chopped
• icing sugar, for dusting
• Topping
• 1 cup mixed nuts, walnuts, Brazil, almonds, hazelnuts, roughly chopped
• 1 tsp butter, melted
• 2 tsp caster sugar
