  • 1 (1") piece pork fat or slab bacon (optional)
  • 2 <sup>1</sup>⁄<sub>4</sub> tsp. cornstarch
  • <sup>3</sup>⁄<sub>4</sub> tsp. oyster sauce
  • <sup>1</sup>⁄<sub>2</sub> tsp. sugar
  • <sup>1</sup>⁄<sub>4</sub> tsp. sesame oil
  • <sup>1</sup>⁄<sub>4</sub> tsp. ground white pepper
  • <sup>1</sup>⁄<sub>2</sub> egg white, lightly beaten
  • 4 oz. shrimp, peeled, deveined, tails removed, finely minced
  • <sup>1</sup>⁄<sub>4</sub> cup minced water chestnuts
  • 2 tbsp. very thinly sliced scallions (white part only)
  • 1 tbsp. minced canned bamboo shoots Kosher salt, to taste
  • 16 (3 ½") round gyoza wrappers
