Zesty Beef and Mushroom Pie - Meet Your Farmer - Nova Scotia

Ingredients

• 1/2 oz. dried mushrooms
• 1 cup boiling water
• 1 tsp dried thyme
• 1 tbsp paprika
• Pinch cayenne
• salt and freshly ground pepper to taste
• 1 lb stewing beef (cut into 1-inch pieces)
• 1 onion (chopped)
• 1 tsp garlic (chopped)
• 2 tsp fresh rosemary (chopped, or 1/2 tsp dried)
• 1/4 cup all-purpose flour
• 1/2 cup red wine
• 1+1/2 cup beef stock
• 1 tbsp butter
• 8 oz. fresh mushrooms (trimmed and cut in half if large)
• 2 tbsp olive oil
• 1 package frozen puff pastry (defrosted)
• 1 egg (beaten with a pinch of salt)
