Ingredients

  • 8 bone-in, skin-on chicken thighs, (patted dry)
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons Low FODMAP Garlic-Infused Oil, (made with olive oil, or purchased equivalent)
  • ¾ cup (48 g) chopped scallions, (green parts only)
  • 1- pound (455 g) eggplant, (trimmed, peeled and cut into 1-inch (2.5 cm) cubes)
  • 2- pounds (910 g) beefsteak tomatoes, (cut into ½-inch (12 mm) dice)
  • 2 medium zucchini, (cut into ½-inch (12 mm) dice)
  • 1 red bell pepper, (trimmed, cored and roughly chopped)
  • 3 tablespoon tomato paste
  • 1 tablespoon finely chopped fresh thyme (or 1 teaspoon dried)
  • ½ teaspoon FreeFod Garlic Replacer, (optional)
  • Fresh basil leaves
  • Fresh thyme
