Wild Venison Sausages - NZ Casings NZ

Ingredients

• 1.4 pounds (650g) venison leg or shoulder, cut into 2.5cm pieces
• 0.55 pound (250g) fatty pork (shoulder is good), cut into 2.5cm pieces
• 2 tsp nutmeg
• 1tsp ground thyme
• 1 tsp ground coriander
• ½ tsp paprika (we like hot paprika but any fine)
• 1 tbsp salt
• 1 tsp freshly ground black pepper
• 1/4 pint port (cold)
